From Catherine:

My mom recently decided to get back into eating healthy (a decision I completely support). Following the lead of many friends and family who used Weight Watchers to change their eating patterns, she decided to make the big commitment and join. I was over at her house a few weekends ago while she was meal prepping for the week, and I was introduced to the breakfast zucchini quiche.

This last weekend I decided to adapt the Weight Watchers recipe and make some changes to hit the flavors I enjoy, caramelized onions and spinach! Simply add Turkey Bacon and you have a wonderful protein filled breakfast!
