Meal Prep Sundays: Blueberry Pomegranate Greek Yogurt Squares

SOCIAL-BlueberryPomegranateSquares Put a sweet spot in your Sunday morning – and throughout the week – with this tasty recipe for blueberry pomegranate Greek yogurt squares! This might not exactly be the most necessary of all the food prep in your meal management bag, but everyone deserves a treat every now and then.

Ingredients:

Makes 6 servings or 12 squares.

1 tablespoon coconut water 3 cups Greek yogurt 2-3 tablespoons honey ½ cup frozen pomegranate seeds ½ cup frozen blueberries

Preparation:

1. Using a blender or food processor, add ¼ cup blueberries and 1 tablespoon coconut water. Blend until smooth, set aside. 2. Line a tray with parchment paper. In a bowl, mix the honey into the Greek yogurt. Pour the yogurt mixture onto the tray and spread it out in an even layer. 3. Drizzle the blueberry purée over the tray of yogurt to make a swirl design. 4. Sprinkle the blueberries and pomegranate seeds over the tray, filling in any blank areas. 5. Freeze 5-6 hours or until the middle is set. 6. Remove and use a sharp knife to slice into equal-sized squares.
