Meal Prep Sundays: Roasted Chicken, Sweet Potatoes & Tomatoes

Chicken and Sweet Potatoes seem to be the go to Meal Prep for most. If you are one of the many die heart Chicken and Sweet Potato fans then check out this recipe; the addition of tomatoes, garlic and fresh thyme make this a perfect spin to a familiar staple.

PS depending on your serving size of chicken and sweet potatoes this recipe can easily be altered. - Catherine

Roasted Chicken, Sweet Potatoes & Tomatoes

Ingredients

2 medium sweet potatoes

4 small beefsteak tomatoes

4 cloves garlic

10 springs fresh thyme

2 T extra virgin olive oil

1 tsp kosher salt

½ tsp freshly ground black pepper

2 large (or 4 small) chicken breasts; portioned to 4 oz serving size

Heat oven to 425F. Wash sweet potatoes and slice into ½ inch thick rounds and place on baking sheet. Wash tomatoes and cut into sixths and place on baking sheet. Smash the garlic and wash thyme and add to baking sheet. Drizzle with olive oil and sprinkle with half of the salt and black pepper.

To prepare the chicken wash and pat dry. Drizzle with some olive oil and season with salt and pepper. Add the chicken to the prepared baking sheet. I had to divide my ingredients into 2 baking sheets to ensure they laid in an even layer.

Roast chicken until cooked through and the vegetables are tender, about 40-50 minutes.
