Roasted Chicken, Sweet Potatoes & Tomatoes
2 medium sweet potatoes
4 small beefsteak tomatoes
4 cloves garlic
10 springs fresh thyme
2 T extra virgin olive oil
1 tsp kosher salt
Ã‚½ tsp freshly ground black pepper
2 large (or 4 small) chicken breasts; portioned to 4 oz serving size
Heat oven to 425F. Wash sweet potatoes and slice into Ã‚½ inch thick rounds and place on baking sheet. Wash tomatoes and cut into sixths and place on baking sheet. Smash the garlic and wash thyme and add to baking sheet. Drizzle with olive oil and sprinkle with half of the salt and black pepper.
To prepare the chicken wash and pat dry. Drizzle with some olive oil and season with salt and pepper. Add the chicken to the prepared baking sheet. I had to divide my ingredients into 2 baking sheets to ensure they laid in an even layer.
Roast chicken until cooked through and the vegetables are tender, about 40-50 minutes.
