Meal Prep Sundays: Baked Sweet Potato Fries
The sweet potato is totally underrated, and we have no idea why. These vegetables are packed full of nutrients you need, and they taste delicious to boot! Switch things up this weekend with our awesome recipe for Baked Sweet Potato Fries and if you happen to have any extra, your meal management bag will be waiting.
Recipe serves 4.
16 oz sweet potatoes
Preheat oven to 425 degrees
Sweet potatoes, cut into skinny fries or wedges, or use a mandolin slicer if you prefer chips.
Spray pan and potatoes with olive or coconut oil spray.
Bake for 15-20 minutes or until golden brown for fries. Bake 5-10 minutes or until golden brown for chips.

Meal Prep Tip:
Not that these are going to last very long (they're stupid delicious), but if you feel guilty and want to save a few for your swolemate to try, keep them from getting soggy in an airtight Sure Seal Container.
