For a sweet sensation in the Meal Prep Sunday mix, try this blueberry oat muffin recipe on for size! With all that added protein, you can feel good about stashing one or two of these in your meal management system.

Makes 3 muffins.

Ingredients:

2 scoops vanilla protein powder
2 oz blueberries
1 oz oats
1.25 tsp coconut oil
1.6 oz unsweetened almond milk

Preparation:

1. Preheat oven to 375° F.
2. Combine ingredients together and pour into a muffin tin or paper muffin cups.
3. Bake for 10-12 minutes or until done.

Macros per Muffin:

164 calories
17g protein
10g carbs
5g fat

Meal Prep Tip:

Bake up a triple or quadruple batch for the week, to bring with you to a summer brunch get together, or even to the beach with the kids!
