Meal Prep Sundays: Irish Skillet

SOCIAL-IrishSkillet Pull out your favorite skillet and get ready to whip up the nutritious, delicious recipe for an Irish Skillet in this week's edition of Meal Prep Sundays!

Ingredients:

Makes 4 servings.

1 lb 90% lean ground beef 4 strips cooked bacon, crumbled 1 yellow onion, diced ½ lb red potatoes, diced ½ lb bell pepper, diced 4 cups green cabbage, shredded 1 tbsp coconut oil 1 cup beef broth 1/4 cup apple juice 2 tbsp mustard 2 tbsp vinegar 1 tbsp Worcestershire sauce 2 tsp kosher salt 2 tsp black pepper, ground

Preparation:

1. Combine the beef broth, apple juice, white vinegar, yellow mustard, Worcestershire sauce, salt, and pepper in a mixing bowl and whisk to blend. Set aside. 2. In a large skillet, heat coconut oil over medium high heat. Brown the diced onion, peppers, and potatoes. When veggies have softened slightly, add the beef. Continue cooking until beef is cooked. Drain excess fat. 3. Add the liquid mixture and the shredded cabbage. Cook another 5-10 minutes over medium heat until most of the liquid is absorbed. 4. Sprinkle crumbled bacon over top and serve immediately or portion into meal prep containers.

Meal Prep Tip:

Making a double batch is easy, although you'll definitely want to use two skillets as the four cups of cabbage take up a lot of space until they wilt down.
