Meal Prep Sundays: Tomato Soup

Winter is around the corner for some of us, and that means lots of homey comfort food like delicious tomato soup. But whoever said comfort food couldn't be healthy? Make a tasty yet nutritional variety for your meal management bag with this week's meal prep recipe.

Ingredients:

Makes about 9 servings.

25 tomatoes (Roma) cut into quarters 12 cloves of garlic 32oz of vegetable broth or chicken broth salt & pepper to taste 3 oz olive oil 2 foil-lined baking sheets

Preparation:

1. Preheat oven to 350F degrees. 2. Toss tomatoes and garlic with olive oil and sprinkle with salt and pepper. Spread over baking sheets in a single layer. 3. Bake for 45 minutes to one hour. Tomatoes should be soft and garlic should be golden brown. Let cool. 4. Once cooled, puree tomatoes and garlic in blender. Add to a pot on the stovetop and combine with broth. Bring soup to a simmer and serve hot or let cool and pour into containers for meal prep.

Meal Prep Tip:

Tomato soup is versatile and can be dressed up or eaten as-is. Sprinkle with basil and parmesan cheese, add sautéed kale or spinach, add sautéed mushrooms or drizzle truffle oil. The possibilities are endless.
